Top of the Morning


I baked two dozen wild berry muffies this morning.

I can hear you thinking "what's a muffie" - it's just the top of the muffin. Not the bottom part, because everyone knows the top of the muffin is everyone's favorite part.

When I lived on Galveston Bay years ago, I found this pan with shallow baking indentions, kind of a cross between a cookie sheet and a muffin pan -
a muffie pan.

One envelope of muffin mix makes 24 muffies. They're like a cross between a cookie and a muffin.

Bite sized, but not too much like the gigantic muffins you find now in the bakeries. Just a crispy, fluffy little round treat. You can grab a few and run out the door, they're great.

If you like muffins and your favorite part is the muffin top, you can get muffin top pans now, I haven't found another muffie style pan. So I'm hanging onto mine, and I make muffies almost every weekend.

Good combinations are banana nut muffies with just one chunk of square semi-sweet chocolate in the top, with a cup of hot tea with milk or iced coffee.

Yum!

Yummy, betcha my grandkiddos would gobble those up. I'm on a mission now to find me some muffie pans.

Jenny, You want new Muffie Pan? NOM for my Grandbaby? (people will now KNOW I'm wacky LOL!)

Carolyn, they are really quick to bake too, only 10 minutes and they're crispy on the bottom and fluffy on top. No 30-45 minute wait for them to rise and bake - zip boom and they're done!

I want a muffie pan,also.Yum,yum!I like to put toppings on top of my muffins,so this would be just absolutely heaven!Where can we get these pans?

We'll have to see if we can find a muffie pan when you're here for the 4th! She might be able to NOM muffies by then!! (See, now they'll KNOW our wackiness is genetic) :)

Gail, if you click on the links, I found muffin top pans. I'll keep looking for the true 'muffie' style, it's 24 shallow little depressions in a cookie sheet-like baking pan.

If I find the elusive muffie pan, I'll let you know where it lies hidden.

Got to find muffies for Baby Evelyn to NOM for July 4!
